Black and white pictures are my favorite and Epic Edits Weblog by Brain Auer helped me take better black and white photos. They gave five simple steps to help you take better pictures, but i will just cover the top four.

One main thing is that you have to continue to practice your black and white pictures because once you have practiced enough, you should be able to see the world monochromatically.

Another step is focusing on contrast. When color is removed our eyes are then attracted to light intensity.  You want to use contrast to distinguish between whats important and what is not important.  If you begin with a photo that already has contrast then it will be able to capture the black and white version better.

Another technique is to focus on texture.  Texture naturally goes with black and white photos because color just adds another layer to the complexity.  You can look for areas that have texture to them.

Another simple step to making a good black and white photo is to NEVER take the photo in black and white if the camera gives you the option to.  Adjusting the photo with Adobe Photoshop or something along those lines will make the picture come out better. A way to train your brain to see if the the photo will come out good in black and wwhite is using that camera option to just take a quick look and preview.
